Oy.
I’m behind. That’s what happens when you spend all weekend acting like a teenage girl at a women’s conference. Of course, I don’t think that would be terrible except, I got a head cold on top of that.
So yesterday was very much a day of recovery. I’m getting there. I’m also glad today is a day that I go in late. There’s some more recovery time.
When did I stop being 20?
Oh yeah… 15 years ago.
Here we go!
Monday – Lasagna. No, we didn’t have it yesterday like we were supposed to. We ended up having a big, late lunch with some friends, and I didn’t feel like cooking. It actually worked out well. I didn’t have to cook and there was something to make today so that I could also put off the grocery store. I’m hungry just thinking about this. It’s my mom’s recipe. We love it.
Tuesday – Mac & Cheese. Surprise.
Wednesday – White Chicken Chili. This is award winning. As in I won an award for this chili. No seriously. In fact, the church had a chili cook-off to determine which one of two men had the best chili. I came in second. That was the first time I ever won anything for cooking something. I should probably write that recipe down as well.
Thursday – Shut up and Eat it Night. That’s code for leftovers.
Friday – We’re going out! I’m rather excited about this. Once a month, they have this thing for the kids called “Friends in Fellowship” at church (the old church, not the new one) and you drop the kids off and they feed them and then the parents can get together for fellowship as well. So we’re going out with some other couples. And I’m pretty stoked. Those relationships with other parents are so important.
Saturday – Meatball & Tortellini soup — New recipe. But we’re going to be hiking and at a craft show. So I want something in the crockpot and this will work just fine.
Sunday – Cheesy Chicken Pot Pie Cups. This is a new recipe. We’ll see how that goes.
