Insanity in the Kitchen: Menu Plan for the Week of October 15th

Geez Louise!  This week has been busy!  (I have so many posts that I want to write.. some funny.  Some serious.  And y’all… history has been made in the House of Chaos last week and I just haven’t had time to talk about it!)

Side Note:  Do you know where the term “geez Louise” comes from?  I didn’t.  And suddenly, at 10:52 on a Sunday night as I attempt to tell you what we’re having for dinner, I needed to know.  So here’s what Urban Dictionary has to say about it:

A mild oath. Roughly equivalent to saying “Jesus Christ” as an oath, but less severe, and used so as not to get stricken down for blasphemy.
Now you know.
Moving on….
Here’s what we’re having (or at least what I’m planning on having this week…)
Monday — Lasagna.  No really.  I’ve been trying to make lasagna for two weeks now and it hasn’t happened.  This week.  Monday night.  We will have lasagna.  Third time’s the charm.
TuesdayMac and Cheese
Wednesday – Cheesy Chicken Pot Pie Cups.  We were supposed to have this today.  But we went out to eat to celebrate my in-law’s 50th wedding anniversary.  FIFTY.  That’s a long time.
Thursday – Fend for yourself night.  I’m taking the night off.
Friday – Buffalo Chicken Salad.  And I’m making the hubs make it because he’s the one that is so good at it.  (It’s the first meal he ever made for me when we were were dating.  Actually, he made it for all of us and only he, I and Thing 4 liked it.)
Saturday – Chinese Chick- Flick night… which really is code for Chinese food and a movie.  Before I met the hubs, Chinese Chick Flick nights were for me.  When he came along, we still do this, but we don’t watch a chick flick.  Somehow Chinese Chick Flick night sounds better than Chinese Dramedy Night.
Sunday – Meatloaf.  It was a request from the hubs.  So then I had to ask… cheese stuffed or my mom’s?  He thought about it and then said my moms.  Which is okay.  It’s easier to make.  :)
So there you have it!

  1. i FINALLY got back to menu planning this week!! your past couple of posts about it reminded me to do so because it is so helpful and makes for a much less hectic week. on the menu this week, creamy polenta with shrooms and peppers, mac and cheese (!), canned soups with homemade bread, and refrigerator medley – aka leftover night!
